Easy Wonton Soup
Ingredients
- Chicken stock2 ½ cups
- Soy sauce2 tsp
- Garlic4
- Ginger · ground3–4.13 inches + ¼ tsp
- Scallion · finely chopped, chopped3
- Salt
- Black pepper
- Ground pork4 oz
- Shaoxing wine1 tsp
- Cornstarch1 tsp
- Sugar¼ tsp
- Sesame oil¼ tsp
- White pepper
- Wonton wrapper20
- Cilantro
Instructions
- Put the soup ingredients in a large pot, cover, bring to a boil, then reduce to low and simmer 10 to 15 minutes. Turn off the heat and let the flavors develop.
- Mix the wonton filling ingredients in a bowl until the cornstarch is fully combined with the liquids.
- Brush the edges of a wrapper lightly with cold water. Place 1/2 teaspoon of filling in the centre, fold into a triangle and press the edges tightly. Wet one bottom corner, then bring the two side corners together and press to form a curved shape.
- Set the wontons 1/2 to 1 inch apart on a parchment-lined tray. Repeat until the filling or wrappers run out.
- Strain the solids out of the soup base and bring it back to a boil.
- Carefully add the wontons and cook 10 to 15 minutes; they are cooked through after about 3 minutes, but the longer cook lets their flavor into the soup. Season with salt and pepper to taste.
- Serve in bowls and garnish with green onion, cilantro and pepper.
