Ingredients
- Ground meat¾ lb
- Onion½
- Carrot3 inches
- Curry1
- Tonkatsu sauce1 tbsp
- Ketchup1 tbsp
- Salt¼ tsp
- Black pepper · ground
- Vegetable oil1 tbsp
- Rice · cooked2
- Egg1
- Mozzarella cheese · shredded1 cup
- Butter1 tbsp
- Parsley1
Instructions
- Preheat the oven to 400°F (200°C). Butter a 6 x 8-inch (15 x 20 cm) baking dish.
- Finely dice the onion and cut the carrot into fine dice.
- Heat 1 Tbsp oil in a stainless steel pan over medium heat, add the onion and sauté. Add the ground meat and cook, breaking it up, until no longer pink.
- Add the carrot, then 1 cup water, the salt and black pepper. Cover and cook for 3 minutes.
- Add the curry roux and let it dissolve. Stir in the ketchup and tonkatsu sauce, then simmer for 1-2 minutes. Keep simmering until the sauce is thick enough that a line drawn through it with a spatula stays visible for 2 seconds.
- Spread the rice evenly in the baking dish. Spoon the keema curry over it in an even layer and make a well in the centre. Crack the egg into the well.
- Sprinkle the mozzarella over the top. Bake for 15 minutes, or until the egg is cooked to your liking and the cheese is bubbling and lightly browned.
- Sprinkle with parsley and serve hot or warm.
