- Ham · diced2 ½ cups
- Spinach2–3 oz
- Cheese · shredded1 cup
- Egg12
- Milk½ cups
- Dijon mustard1 tbsp
- Salt1 tsp
- Pepperto taste

Instructions
- Heat the olive oil in a large heavy pan over medium-low heat. Add the sliced onions and cook, stirring occasionally, for about 30 minutes, until almost jammy and deep golden brown.
- Toss the diced ham in a skillet with a quick drizzle of olive oil and pan-fry until the edges are browned and some fat has rendered. Add the spinach and stir until wilted. Remove from the heat.
- Whisk the eggs with the milk, Dijon mustard, salt and pepper.
- Preheat the oven to 350°F. Grease a 9×13 inch baking dish. Layer the ham, spinach and onions on the bottom. Sprinkle with half the cheese, pour the egg mixture over, arrange the croissant pieces on top and finish with the remaining cheese.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for another 5 to 10 minutes, until the centre is almost completely firm when the pan is gently jiggled and the top is just starting to puff.
- Slice and serve.
