Ingredients

Instructions

  1. Put a phin filter on a serving glass, remove the lid and metal screw filter, then add about 4 teaspoons of coffee grounds to the basin. Place the filter on top and screw it down until it meets light resistance.
  2. Pour boiling water into the phin to about a quarter full to bloom the grounds, and let it drip into the glass.
  3. Once the coffee has bloomed, fill the phin about three-quarters full with more boiling water. Cover and let it drip for about 5 minutes.
  4. Move the coffee to the fridge to cool. Repeat with the remaining grounds and water for the second serving.
  5. Whip the egg yolks and condensed milk with a hand whisk or mini electric whisk for about 5 minutes until soft and fluffy.
  6. To serve, add ice cubes to the glasses of brewed coffee, spoon the whipped egg mixture on top, and dust with cocoa powder if you like.
