Egg Drop Soup 4 Ways
Ingredients
- Chicken stock3 cups
- Scallion · diced1
- Ginger1
- Cornstarch1 ½ tbsp
- Egg2
- Salt½ tsp + 0.13 tsp of baking soda, 1/2 tsp of cornstarch, and 1.5 tsp of cooking oil
- White pepper¼ tsp
- Tomato · peeled2
- Garlic · grated2 cloves
- Vegetable oil5 tsp
- Sugar1 ¾ tsp
- Chicken breast · sliced thinly4 oz
- Spinach1 bunch
- Goji berry · dried2
Instructions
- Crack the 2 eggs into a bowl and beat well.
- Bring the 3 cups chicken stock to a simmer, optionally with a few pieces of spring onion white and a few slices of ginger for extra flavour.
- Mix 1.5 tbsp cornstarch with 3 tbsp water.
- Once simmering, strain out the aromatics. Slowly pour in the cornstarch slurry while stirring so it doesn't clump; it should thicken slightly in under a minute. Keep it loose, not thick.
- Turn off the heat. Pour in the beaten egg slowly while stirring, and let the residual heat cook it. Season with 1/2 tsp salt (or to taste) and 1/4 tsp white pepper. Serve, topped with the diced green spring onion.
