Ingredients

Instructions

  1. Mix the caster sugar and cinnamon powder in a flat bowl with a fork to make cinnamon sugar.
  2. Set up a piping bag: place two large piping bags one inside the other, fit a star nozzle, and cut the tip so the nozzle shows. Stand a tall glass, put the bag inside, and fold the top over the rim.
  3. Line a baking tray or plate with parchment paper.
  4. In a small pan, bring the water, butter, sugar and vanilla essence to a boil over high heat, stirring.
  5. Once the butter has melted and the water boils, turn off the heat, add the refined flour and stir with a spatula until a dough forms.
  6. Let the dough rest 1 to 2 minutes until warm to the touch. Transfer it to the piping bag, press it down, and twist the open end closed.
  7. Pipe 4 to 5 inches of churros onto the tray and cut the ends with a knife.
  8. Fry in oil at 165°C over medium heat until crisp and golden brown. Drain on a sieve for 1 to 2 minutes, then coat in the cinnamon sugar.
  9. Optionally, make a cavity in each churro with a straw and pipe in chocolate spread or cream cheese.
  10. Serve warm.
