Ingredients

Instructions

  1. Chop the dried fruits and nuts small. Keep the nuts separate.
  2. Put the raisins, apricots, cranberries and candied peel in a large bowl.
  3. Boil the water and pour it over the dried fruit. Leave to cool.
  4. Grind the cinnamon, cloves and nutmeg to a fine powder. Set aside to cool.
  5. When the fruit mixture has cooled, preheat the oven to 170 C.
  6. Stir the brown sugar, melted butter, orange juice, vanilla and vinegar into the fruit mixture.
  7. Sift the flour, salt, spice powder and baking soda together. Make a well in the centre.
  8. Once the oven is hot, pour the cooled fruit mixture into the flour all at once. Fold gently with a spatula until no flour streaks remain.
  9. Add the cherries and chopped nuts and stir gently without overmixing.
  10. Pour into a cake pan and knock it twice on the counter to settle the batter.
  11. Bake at 170 C for 35 to 40 minutes. An 8-inch pan takes about 40 minutes, a 9-inch pan 32 to 34 minutes, and a loaf pan 50 to 55 minutes.
  12. The cake is done when a skewer inserted comes out clean.
  13. Cool in the pan for 10 to 15 minutes, then turn onto a wire rack and cool completely before slicing.
