Eggless ragi cake | Chocolate ragi cake recipe
Ingredients
- Flour1 ½ cups
- Cocoa powder2 + 2–3 tbsp
- Sugar1 ¼ cups
- Yoghurt⅓ cups
- Butter⅔ cups
- Milk1 ¾ cups
- Vinegar½ tbsp
- Vanilla4 tsp
- Baking powder1 tsp
- Baking soda½ tsp
- Salt0.13 tsp
Instructions
- Grease a 7 or 8 inch pan and line it with parchment. Preheat the oven to 170°C (160°C fan-forced), for at least 15 minutes.
- Sieve the ragi flour, wheat flour, salt, baking powder, baking soda and cocoa together three times.
- Add the sugar or jaggery to the same bowl.
- Whisk the curd, then add it with the milk, vinegar, vanilla and melted butter or oil. Mix just until combined; do not overmix.
- Pour the batter into the prepared pan and knock the pan on the counter a few times.
- Bake for 25 to 30 minutes, until a skewer inserted comes out clean.
- Cool in the pan for about 15 minutes, then move to a wire rack and cool completely before slicing. Handle gently, as the cake is delicate.
- For the optional frosting, boil the milk with the cocoa and sugar, stirring often, until thick. Stir in the vanilla and turn off the heat. Cool completely, as it thickens as it cools.
- Pour the frosting over the cake on a deep plate, spread gently with a spatula, and sprinkle with white chocolate or sprinkles if you like.
