Instructions

  1. Bring the strawberries close to room temperature, rinse them, dry them well, remove the stems, and cut each one vertically into 2 halves.
  2. Grease a 7 or 8 inch cake tin, or an 8.5 by 4.5 inch loaf pan. Dust with flour or line with parchment. Preheat the oven to 360°F (180°C) for at least 15 minutes.
  3. In a mixing bowl, stir together the milk, sugar, vinegar, melted butter, and vanilla until the sugar dissolves. Set a sieve over the bowl.
  4. Sift the flour, baking powder, baking soda, and salt through the sieve. Mix lightly with a spoon, sifting in half the flour first, then mix in the rest with a whisk or spatula until no lumps remain. Do not overmix.
  5. Pour the batter into the pan and tap it on the counter twice. Arrange the strawberry halves on top, as close together as possible and avoiding the edges. Sprinkle sugar over the berries.
  6. Bake at 360°F (180°C) for 15 minutes. If using a 7 inch tin, then bake at 340°F (170°C) for a further 20 minutes.
  7. For a moist top, check after 30 minutes. For a crusty top, bake for 40 minutes. Either way, it is done when a tester inserted comes out clean but moist from the strawberries.
  8. Cool in the pan on a wire rack for 10 minutes, then turn out onto the rack and cool completely before slicing. Dust with powdered sugar just before serving.
