Egusi Stew
Ingredients
- Ground egusi1 ½ cups
- Tomato · chopped6
- Onion · chopped1
- Scallion · chopped1–2
- Garlic · peeled5 cloves
- Ginger · peeled1 inch
- Habanero pepper1
- Cubes Maggi2
- Oil1 cup
- Beef½ lb
- Salt1 tsp
Instructions
- Blend the garlic, ginger and half of the green onions, then set aside.
- Heat the oil in a pot on high for about 4 minutes.
- Add the chopped onion and sauté for about 3 minutes, until translucent, stirring now and then.
- Add the chopped tomatoes and cook until they shrink and start sticking to the bottom of the pot.
- Add the blended garlic-ginger-onion mixture and stir for about 2 minutes.
- Add the ground egusi with no added water and mix well for about 5 minutes. Some egusi will stick to the pot, which is fine.
- Add the boiled beef with its stock, then add about 1 cup of water for the desired consistency. Keep it a little thinner than you want, as it will thicken while simmering.
- Add the salt, seasoning cubes and habanero (whole or ground, as preferred). Mix well, cover and simmer for 5 minutes.
- Stir in the remaining green onions and turn off the heat. Serve with boiled rice, plantains or another starch.
