Ingredients
- Scallion1
- Shrimp · peeled9 oz
- Potato starch2 tbsp
- Egg1
- Chicken stock · powder1 tsp
- Black pepper
- Butter1 tbsp
- Bread4 slices
- Vegetable oil · for frying
- Oyster sauce1 tbsp
- Ketchup1 tbsp
- Vinegar1 tbsp
- Sugar½ tbsp
- Garlic · minced1 tbsp
Instructions
- Combine the oyster sauce, ketchup, white vinegar, sugar and minced garlic in a small bowl. Mix well and set aside.
- Thinly slice the green onion; about 2 tablespoons is enough.
- Pat the shrimp dry and finely mince them, then transfer to a mixing bowl.
- Add the green onion, potato starch, egg white, chicken bouillon powder, black pepper and melted butter to the shrimp. Stir vigorously in one direction for 2 to 3 minutes until sticky. If the mixture is still too watery, add a little more potato starch.
- Cut the crusts off the bread and cut each slice into quarters.
- Spread a spoonful of shrimp filling on a piece of bread and cover with another piece. Gently press the centre to help them stick, and tidy any spilled filling from the sides.
- Heat enough oil for deep-frying to 160°C (320°F). Fry the shrimp toasts one at a time for 6 minutes, until golden brown and crispy.
- Drain on a wire rack or paper towels for 2 minutes.
- Arrange on a plate and serve with the dipping sauce.
