Family Dinner….Italian Style
Ingredients
- Burrata cheese1
- Pasta13 oz
- Canned tomato · peeled30 oz
- Parmesan cheese · grated1 ½ oz
- Garlic2
- Basil½ handfuls
- Extra virgin olive oil · flakes1 tbsp
- Salt
- Black pepper
Instructions
- Set the burrata in a bowl to come to room temperature while you make the sauce.
- In a large saucepan or pot, sauté the olive oil and garlic cloves for a few minutes until golden.
- Add the canned tomatoes, break them up slightly with a wooden spoon, then add one cup of water to the can, swirl to collect the leftover sauce, and add that to the pot.
- Season well with salt and pepper, tear in the basil leaves, and simmer covered over low-medium heat for 20 minutes.
- Let the sauce cool slightly, blend until smooth with an immersion blender or regular blender, then return it to the pot.
- Cook the pasta in a large pot of boiling salted water until al dente, which is 2 minutes less than the package time.
- Drain the pasta, reserving some pasta water. Add the pasta to the sauce with the grated Parmigiano and a splash of pasta water, stirring until silky; add more pasta water if needed.
- Remove the pan from the heat, place the burrata in the middle of the pasta and cut it open. Finish with a drizzle of olive oil, fresh basil leaves and red pepper flakes.
