Family Meals: 30-Minute Baked Salmon Pinwheels
Ingredientes
- Olive oil1 colher de sopa
- Onion · finely diced1
- Garlic · minced4
- Spinach5 oz
- Cream cheese · softened8 oz
- Sun dried tomato · chopped¼ xícara
- Salmon2 ½ lb
- Creole seasoning2 colheres de sopa
- Butter4 colheres de sopa
- Lemon · sliced2
- Parsley · chopped, for garnish
- Salt
- Black pepper
Modo de preparo
- Preheat the oven to 175°C (350°F).
- Heat the oil in a skillet over medium heat. Sauté the diced onion for about 2 minutes until soft. Add the garlic and spinach and cook for another 3 minutes until the spinach wilts. Season with salt and pepper, move to a bowl and let cool for about 5 minutes.
- Once cooled, mix in the cream cheese and sun-dried tomatoes until evenly combined.
- Season the salmon on both sides with Creole seasoning and spread the cream cheese mixture in an even layer on top. If the filling is too soft to roll, chill the salmon for about 10 minutes in the freezer to firm it up.
- Roll the salmon up tightly and secure with toothpicks or kitchen twine. Slice into 1½-inch (about 4 cm) thick pinwheels and arrange them in a large cast-iron skillet over the lemon slices.
- Scatter the butter over the pinwheels and sprinkle with a little more Creole seasoning.
- Bake for 15 minutes, until the salmon turns light pink and firm. Then broil on high for 3-5 minutes until golden brown on top.
- Garnish with chopped parsley before serving.
