Preparación

  1. Stir the melted butter and the seasoning packet together in a small bowl.
  2. In a medium bowl, mix the bread mix, hot water, yeast and 2 tablespoons (about 30g) of the seasoned butter until a soft, slightly rough dough forms.
  3. Turn the dough onto a lightly floured surface and knead about 1 minute, until smooth and somewhat bouncy.
  4. Pat into a rectangle about 7 by 6 inches. Cut into 5 rows and 6 columns for 30 pieces (about 23g each).
  5. Shape each piece into a ball, keeping the rest covered, and arrange 1/4 inch apart on a parchment-lined baking sheet in a tree shape: 1, 2, 3, 4, 5, 6, 5, 2, 2. (Alternatively, use a greased paper Christmas tree pan, filling the corners first; the balls won't touch.)
  6. Cover and let rise about 30 minutes, until slightly puffy. Meanwhile, preheat the oven to 375°F with a rack in the center.
  7. Uncover, brush generously with about half the remaining seasoned butter, re-cover and let rise another 15 to 30 minutes, until puffier and a pressed dough springs back slowly.
  8. Brush again with seasoned butter, then top evenly with the mozzarella.
  9. Bake 20 to 25 minutes, until the cheese is bubbly and the rolls are golden brown.
  10. Brush with any leftover seasoned butter and sprinkle with red pepper flakes and/or Parmesan if using.
