FAST High Protein Beef Pasta Meal Prep

By Chef Jack Ovens · 30 min

Ingredients

Instructions

  1. Bring a pot of salted water to the boil. Cook the pasta 1 minute less than the packet says. Drain, keeping about ½ cup of the pasta water.
  2. Slice the steak into thin strips, put in a bowl and season with salt and pepper.
  3. Heat a large, high-sided pan over high heat. Add the oil and sear the steak in batches for 2 minutes per side, until golden. Sear 30–60 seconds more per side for more doneness. Remove and set aside.
  4. In the same pan over medium-high heat, melt the butter. Add the garlic and sauté for 1 minute. Add the stock and cook for 1 minute.
  5. Add the cream or evaporated milk, smoked paprika, chilli, salt and pepper. Stir, bring to a simmer, then lower the heat and cook for 5–6 minutes, until reduced.
  6. Add the spinach and cooked pasta and cook for 1 minute, until the spinach wilts and the pasta is coated. Add the steak with its resting juices, stir, and take off the heat.
  7. Divide among 6 x 750 ml meal prep containers. Garnish with parsley and Parmigiano Reggiano.
