Ingredients

Instructions

  1. Preheat the oven or air fryer to 190°C (375°F). If using an oven, line a baking tray with parchment paper.
  2. Put the potatoes in a bowl with the olive oil and all the seasonings, and mix well.
  3. Spread the potatoes on the lined tray and bake for 25-30 minutes, until soft and golden, turning them halfway through. In an air fryer, cook for 18-22 minutes instead. Take out and let cool.
  4. In a large high-rimmed pan over high heat, sear the beef mince in the olive oil for 6-7 minutes, breaking it up as it cooks, until browned and cooked through to at least 71°C (160°F).
  5. Add the garlic, the white part of the spring onions, the ground cumin, the Italian herbs and seasoning to taste. Mix and cook for 1-1½ minutes.
  6. Add the chopped tomatoes and passata, stir well, lower the heat to medium and simmer for 12 minutes, stirring now and then.
  7. Scatter the grated mozzarella over the top, let it melt, then take off the heat.
  8. Divide the potatoes evenly among 5 x 750 ml containers, top with the beef mixture, and garnish with sour cream, the green spring onion tops and sriracha mayonnaise.
