Modo de preparo
- Preheat the oven or air fryer to 190°C (375°F). If using an oven, line a baking tray with parchment paper.
- Put the potatoes in a bowl with the olive oil and all the seasonings, and mix well.
- Spread the potatoes on the lined tray and bake for 25-30 minutes, until soft and golden, turning them halfway through. In an air fryer, cook for 18-22 minutes instead. Take out and let cool.
- In a large high-rimmed pan over high heat, sear the beef mince in the olive oil for 6-7 minutes, breaking it up as it cooks, until browned and cooked through to at least 71°C (160°F).
- Add the garlic, the white part of the spring onions, the ground cumin, the Italian herbs and seasoning to taste. Mix and cook for 1-1½ minutes.
- Add the chopped tomatoes and passata, stir well, lower the heat to medium and simmer for 12 minutes, stirring now and then.
- Scatter the grated mozzarella over the top, let it melt, then take off the heat.
- Divide the potatoes evenly among 5 x 750 ml containers, top with the beef mixture, and garnish with sour cream, the green spring onion tops and sriracha mayonnaise.
