FASTEST Pizza Dough Recipe in 3 Hours! (Same Day Italian Pizza)

By Vincenzo's Plate · 180 min

Ingredients

Instructions

  1. Pour the water into the stand mixer bowl, then add 2 handfuls of flour, the 5 teaspoons of salt and the yeast. Mix about 20 seconds to activate the yeast.
  2. Add half the remaining flour and keep mixing, then add the rest gradually until well combined, aiming for a dough temperature of about 25°C (77°F).
  3. Lightly dust a pizza tray or airtight containers with fine semolina.
  4. Knead the dough on a clean surface until smooth. Divide it with a scraper and weigh the pieces: 270 g (9.5 oz) each for 6 balls, or 250 g (8.8 oz) each for 7 balls.
  5. Shape each piece into a ball by tucking the bottom under, or by rolling it in a circle on the bench. Place the balls on the tray or in containers with space between them.
  6. Cover and rest the dough balls at room temperature for at least 3 hours. Do not refrigerate.
  7. Lift a dough ball, dust it with semolina and coat both sides in a bowl of semolina. Press the center outward toward the edges to start the puffed rim.
  8. On a clean surface, press from the center outward, turning the dough, until the middle is thin and the rim is full of air. Stretch further by gently slapping the edges or lifting and rotating the dough on your fingers.
  9. Dust the peel with semolina and place the dough smooth side down. Pinch and seal any small holes.
  10. Spread crushed tomatoes over the center, leaving the edges bare. Tear basil by hand and scatter it on top, add a light sprinkle of Pecorino Romano, then your toppings.
  11. Drizzle with guanciale oil or extra virgin olive oil and add sliced mozzarella. Bake in a pizza oven preheated to 400°C (750°F): cook one side for 30 seconds, turn and cook each side for another 15 to 20 seconds, about 90 seconds in total.
  12. Check that the base is evenly cooked and the crust is puffed and golden. If the edges are pale, bake a few seconds longer.
