Instructions

  1. Cut the butter into small pieces and melt it in a wide stainless steel skillet over medium heat, swirling the pan and scraping the bottom with a heat-proof spatula.
  2. Cook until the butter turns a nice golden brown (about 5 minutes total), then remove from heat and pour into a cool bowl, taking care not to burn it.
  3. Let the butter cool for another 5-10 minutes while you measure and prep the other ingredients.
  4. Beat the browned butter, white sugar, brown sugar and vanilla in a mixer on medium-high for 2-3 minutes.
  5. Beat in the eggs for 1-2 minutes until shiny and smooth.
  6. Mix in the flour, baking soda, baking powder and salt until just combined into a dense, shiny dough.
  7. Let the dough cool for 15-20 minutes, then fold in the chocolate chips or chunks, by hand if easier.
  8. Let the dough rest for another 20-30 minutes.
  9. Preheat the oven to 350°F. Scoop 3-tablespoon balls of dough onto a baking sheet and bake for 9 minutes, until the edges look cooked but the centers are still slightly soft and puffy.
  10. Rest the cookies on the sheet for 15-20 minutes so the centers sink and firm up.
