Ingredients
- Bacon12 slices
- Garlic · minced1 tsp
- Spinach3 cups
- Macaroni pasta1 lb
- Butter½ cups
- Flour¼ cups
- Milk3 cups
- Half & half1 cup
- Salt½ tsp
- Mustard · ground½ tsp
- Cheese · shredded5 cups
- Breadcrumb½ cups
- Parmesan cheese · shredded½ cups
- Parsley · chopped
Instructions
- Cook the bacon according to the package directions, then chop it into small pieces (about 3/4 cup).
- Cook the spinach with the garlic, or skip it if you prefer.
- Cook the pasta until al dente, about 1 minute less than the package time. Drain, put it in a large bowl and stir in 2 tablespoons of butter.
- In a large saucepan, melt the remaining 6 tablespoons of butter over medium heat. Whisk in the flour to make a thick paste and cook for 1 minute. Slowly whisk in the milk, half-and-half, salt and ground mustard. Bring to a simmer, then whisk in the cheese until smooth and remove from the heat.
- Pour the sauce over the buttered pasta and stir in the bacon and spinach. Serve right away with parsley, or continue to bake.
- Preheat the oven to 400°F (204°C). Spread the macaroni and cheese in a greased 9×13 inch baking dish. Top with breadcrumbs and parmesan, cover with foil and bake for 10 minutes. Remove the foil and bake 10 more minutes.
- Let it cool for 10 minutes, garnish with parsley if you like, and serve.
