fig & goat cheese puff pastry bites
Ingredients
- Flour
- Puff pastry · frozen1
- Fig jam½ cups
- Goat cheese4 oz
- Pecan · chopped½ cups
- Egg1
- Rosemary · finely chopped1 tsp
- Salt
Instructions
- Preheat the oven to 400°F. Grease a mini muffin tin generously with cooking spray.
- Dust the counter and rolling pin with flour. Roll the puff pastry sheet into a rectangle about 10 by 15 inches.
- Cut the pastry into 24 squares, about 2.5 inches each (4 columns by 6 rows). Press each square into a muffin cup to form a cup, then prick the bottom of each cup twice with a fork so it does not puff too much.
- Put about ½ to ¾ teaspoon of fig jam into each cup. Add a few crumbles of goat cheese and about 1 teaspoon of chopped walnuts or pecans.
- Beat the egg in a small bowl with a fork and brush it on the edges of the pastry to help it turn golden.
- Bake 12 to 14 minutes, until the pastry is golden brown and the cheese is melty.
- Take the tin out of the oven and sprinkle each bite with a little chopped rosemary and a pinch of flaky sea salt. Cool 5 minutes, then lift each bite out with a fork. Makes 24 bites.
