Ingredients

Instructions

  1. Heat the olive oil in a large frying pan over medium heat.
  2. Pat the cod fillets very dry, season both sides with salt and pepper, and coat them all over in flour.
  3. Fry the fillets for 3 to 4 minutes per side until golden and cooked through, then drain on paper towels.
  4. In the same pan over the same heat, add the shallot and garlic and stir constantly. After 2 to 3 minutes, stir in 1 tablespoon (9 grams) flour and keep stirring for 2 minutes.
  5. Add the white wine and thyme, stir and simmer until the alcohol has cooked off, about 3 minutes.
  6. Add the milk and broth and stir for 3 to 4 minutes until slightly creamy. Stir in the parsley and season with salt and pepper.
  7. Return the fish to the pan, turn each fillet to coat in sauce, then reduce to low-medium heat and simmer for 1 to 2 minutes.
  8. Transfer the fish to a serving dish, spoon the sauce over it, and garnish with lemon wedges and parsley.
