Fish Fingers (and they're Baked! )
Ingredients
- White fish600 g
- Oil
- Breadcrumb1 ½ cups
- Parmesan cheese¼ cups
- Paprika2 tsp
- Salt
- Black pepper
- Egg1
- Mayonnaise1 tbsp
- Flour2 tbsp
- Tartare sauce or other seafood dipping sauce
- Lemon
- Chive · finely chopped
Instructions
- Preheat the oven to 180°C / 350°F.
- Spread the breadcrumbs on a tray, spray with oil and bake for 4 minutes until golden. Tip them into a bowl and mix in the remaining crumb ingredients.
- Raise the oven to 220°C / 425°F (200°C fan). Spray the tray you used with oil.
- Mix the batter ingredients in a separate bowl.
- Cut the fish into strips 1.5 x 11 cm (3/5 x 4.5 in), allowing for them to shrink about 30% in length.
- Put the fish strips in the batter and gently turn to coat. Coat them straight away, as they turn watery if left sitting.
- Lift each strip out with tongs and press it into the breadcrumbs, spooning crumbs over and pressing with fingers so they stick.
- Place the coated fish on the oiled tray, spray with oil and bake for 13 minutes, or until crispy on the outside.
- Serve immediately with lemon wedges and tartare sauce or another seafood dip.
