- Garlic2 cloves
- Mustard oil3–4 tbsp
- Chickpea flour2 tbsp
- Ginger · grated4
- Chili pepper · finely chopped2
- Cilantro · finely chopped
- Peppercorn · cracked1 tsp
- Turmeric · powder½ tsp
Instructions
- Cut the fish into chunks, then sprinkle with the salt and lemon juice.
- Put the marinated fish into a steamer with the roughly crushed garlic and the squeezed lemon.
- Add water to the steamer, then steam the fish for about 5-7 minutes. Remove from the heat and let it cool.
- Blend most of the steamed fish and the garlic in a food processor until smooth, keeping some fish in larger chunks for texture.
- Put all the fish into a large bowl.
- Toast the gram flour in a dry frying pan on gentle heat, stirring constantly, until a shade darker and smells slightly sweet (about 5 minutes). Remove from the heat.
- Add the ginger, chillies, salt, coriander, pepper, turmeric and toasted gram flour to the fish and mix thoroughly. Cover and chill for 15-20 minutes.
- Wet your hands and shape the mixture into 5cm patties.
- Heat the mustard oil in a non-stick pan to smoking point, then take it off the heat and let it cool. Reheat gently before frying.
- Fry the patties over medium heat for 1-2 minutes per side until crisp and golden on both sides.
