Fish with CREAMY Garlic Potatoes | One of Spain's BEST-KEPT Recipes
Ingredients
- Potato3
- Mayonnaise⅔ cups
- Garlic3 cloves
- Lemon2 tsp
- Extra virgin olive oil3 tbsp
- Cod4
- Bell pepper · roasted1
- Chive · chopped
- Salt
- Black pepper
Instructions
- Cut the peeled potatoes into small bite-sized cubes and spread them in a single layer in a stock pot. Cover with just enough water, season generously with salt, and heat on high.
- Meanwhile, put the mayonnaise in a large bowl, finely grate in the garlic, add the lemon juice and 1 tbsp (15 ml) olive oil, season with salt and pepper, and whisk together.
- After 15 to 20 minutes, when the potatoes are just cooked through (a toothpick slides in easily), drain them into a colander and rinse under cold water. Shake off excess water, then add them to the garlic mayonnaise and gently mix until well coated.
- Heat a large frying pan over medium heat and add 2 tbsp (30 ml) olive oil.
- Meanwhile, pat the cod fillets dry with paper towels and season both sides with salt and pepper.
- Add the cod to the hot pan and fry for 4 minutes per side, or until just cooked through.
- Spoon the garlic potatoes into serving dishes, top each with a cod fillet, lay a couple of strips of roasted red bell pepper over each fish, sprinkle with chopped chives, and serve at once.
