Five-Ingredient Biscuits and Sausage Gravy | Kenji’s Cooking Show
Ingredients
- Flour1 cup + 1 tbsp
- Baking powder1 ½ tsp
- Salt¼ tsp
- Heavy cream5 oz + 1 cup
- Sausage4 oz
- Black pepper · ground
Instructions
- Preheat the oven to 425°F.
- Combine the flour, baking powder and salt in a bowl. Add the heavy cream and mix into a shaggy dough without kneading.
- Turn the dough onto a floured surface and shape it into a rough log about 3 inches wide and 9 inches long. Cut it into three biscuits with a sharp knife.
- Transfer the biscuits to a baking sheet and bake until golden brown, about 15 minutes. Brushing with heavy cream or melted butter before baking gives darker, more even browning, if you like.
- For the gravy, cook the sausage in a medium skillet over medium-high heat, breaking it up with a wooden spoon until no longer pink. If the pan is very dry, add a couple of teaspoons of oil or butter.
- Add 1 tablespoon of flour and stir to combine.
- Whisk in the heavy cream or milk and bring to a simmer, stirring often. Thin with more cream or milk if too thick.
- Season generously with black pepper and salt.
- When the biscuits are done, transfer to a plate and smother with the sausage gravy.
