Fluffy Buttermilk Pancakes Recipe
Ingredients
- Flour2 cups
- Sugar1 tbsp
- Baking powder1 ½ tsp
- Baking soda1 tsp
- Salt1 tsp
- Buttermilk2 cups
- Egg2
- Vanilla2 tsp
- Butter3 tbsp
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.
- In a medium bowl, whisk the buttermilk, eggs and vanilla until well combined.
- Pour the buttermilk mixture into the flour mixture, add the melted butter, and fold until just combined, leaving a few lumps. Let the batter rest while you heat the pan.
- Heat a large skillet or griddle over medium heat. It is ready when a few drops of water dance and evaporate within 5 to 10 seconds. Brush lightly with butter.
- Working in batches, pour about ¼ to ⅓ cup of batter per pancake, leaving space between them.
- Cook 3 to 4 minutes until golden on the bottom and bubbles appear on top, then flip and cook 2 to 3 minutes more until golden brown.
- Brush the pan with more butter between batches as needed, adjusting the heat between medium and medium-low.
