Fluffy & Cripsy Dumplings | How to Make Perfect Dumplings at Home 🥟 It's so fluffy I'm gonna DIE!!!
Ingredients
- Flour2 ½ cups
- Yeast½ tsp
- Sugar2 tsp
- Ground pork½ lb
- Ground chicken½ lb
- Garlic · chopped2 tsp
- Ginger · chopped3 tsp
- Scallion · chopped2
- Shaoxing wine1 tbsp
- Oyster sauce2 tbsp
- Sesame oil1 tsp
- Black pepper¼ tsp
- Vegetable oil3 tbsp
- Dumplings6–7
- Sesame seed
Instructions
- Put the flour, yeast and sugar in a mixer bowl. Add the warm water and knead on medium speed for 3-4 minutes until a dough forms (or do it by hand in a bowl). Cover with plastic wrap and let rise in a warm place for 1 hour 30 minutes.
- Meanwhile, mix all the filling ingredients in a bowl until sticky.
- When the dough has doubled or tripled, roll it into a rope about 2.5 cm (1 in) thick, dusting with flour as needed. Cut into 2 oz pieces (1 oz for small dumplings) and roll each into a ball, then flatten between your palms.
- Roll each piece into a 3-inch circle, keeping the edge thinner than the centre. Keep the rest covered with a towel while you work.
- Place 1 heaping tablespoon of filling in the centre. Pinch the edges closed with your index finger and thumb while pushing the filling in with your left thumb.
- Place the sealed dumplings in an 8-inch cast iron pan coated with 3 tablespoons of cooking oil, with 6-7 fitting in the pan. Repeat with the remaining dough and filling. This makes about 20 regular or 40 small dumplings.
- Rest the dumplings uncovered for 15-20 minutes so they don't stick together.
- Pour in 1 cup of cold water, or enough to cover 3/4 of the dumplings. Cover and bring to a boil over medium-high heat. If it boils over, uncover briefly and tilt the lid about 1 inch.
- Cook over medium-high heat until the dumplings are cooked through and crisp on the bottom, about 10 minutes. Garnish with black sesame seeds.
