fluffy orange cinnamon rolls
Ingredients
- Orange7 tsp
- Sugar1 cup
- Milk½ cups
- Yeast2 ¼ tsp
- Orange juice6 tbsp
- Egg1
- Butter · melted, softened11 tbsp
- Bread flour3 ¼ cups
- Salt¾ tsp
- Brown sugar⅔ cups
- Cinnamon · ground1 ½ tbsp
- Cream cheese · softened4 oz
Instructions
- In a bowl, rub the orange zest into the sugar for about 30 seconds.
- Warm the milk until it reads 120°F, add it to the sugar, sprinkle the yeast on top and wait 2 minutes until it foams. Add the orange juice, egg, egg yolk and melted butter and mix on medium speed for 30 seconds.
- Stir in the flour and salt with a wooden spoon until a dough forms.
- Knead on medium speed with a dough hook for 8 to 10 minutes; the dough will be sticky.
- Place the dough in a lightly oiled bowl, cover with plastic wrap and a warm towel, and let rise 1 to 1½ hours until doubled. It is ready when a finger poke leaves a dent that springs back slowly.
- Roll the risen dough on a well-floured surface into a 10x14-inch rectangle.
- Spread the softened butter over the dough, leaving a ¼-inch border on the far short side. Mix the brown sugar, cinnamon and orange zest, sprinkle over the butter and rub in, leaving the same border.
- Starting from the short side without the border, roll up tightly and pinch the far edge to seal. Place seam-side down, trim ½ inch off each end, and gently press both ends inward.
- Cut the log into nine 1-inch slices using dental floss or a serrated knife.
- Line a 9-inch square pan with parchment and arrange the rolls in it. Cover and let rise 30 minutes to 1 hour, until doubled and touching.
- Meanwhile, preheat the oven to 350°F.
- Bake 20 to 25 minutes, until just golden at the edges.
- While the rolls bake, beat the cream cheese, butter, powdered sugar, orange juice and zest until smooth and fluffy, 1 to 2 minutes.
- Spread the frosting over the warm rolls and serve.
