Fondant Potatoes (Melting potatoes)
Ingredients
- Potato4 x 400 g
- Salt¾ tsp
- Black pepper½ tsp
- Extra virgin olive oil2 tbsp
- Butter3 tbsp
- Thyme6
- Chicken stock1 cup
Instructions
- Preheat the oven to 200°C (180°C fan-forced).
- Cut each potato into cylinders about 6 cm wide and 7 cm tall, then halve them to get 8 short cylinders about 3.5 cm tall.
- Pat the potatoes dry, put them in a large bowl and toss with half the oil, the salt and the pepper.
- Heat the remaining 1 tablespoon of oil in an ovenproof heavy-based skillet over medium-high heat. Sear the potatoes for 6 to 8 minutes per side, until golden.
- Add the butter and thyme. Once melted, spoon the butter over the potatoes. Add the stock and bring to the boil, then transfer to the oven and bake for 30 minutes until tender, basting at the 15-minute mark.
- Baste once more and serve. The stock should be absorbed, leaving just the butter.
