Forget Bad Kale Pasta, Try This Instead
Ingredients
- Kale1 bunch
- Fusilli300 g
- Black olive30
- Garlic2
- Chili pepper
- Salt1 tbsp
- Extra virgin olive oil
- Pepper
Instructions
- Tear the kale into small pieces by hand, removing it from the stems. The smaller the pieces, the better.
- Bring a pot of water to a boil, dissolve 1 tablespoon of rock salt in it, then add the pasta and kale.
- Stir with a long wooden spoon so nothing sticks to the bottom, and cook for about 10 minutes.
- While the pasta cooks, heat 4 tablespoons of extra virgin olive oil in a large saucepan over low heat.
- Crush and add 2 garlic cloves, then quickly add 1 tablespoon of pasta water so the garlic does not burn.
- Crush and add the black olives, along with half of the dried chili (keep the other half for later).
- Add the cooked kale and pasta to the saucepan with half a mug of pasta water and mix gently.
- Sprinkle over the remaining dried chili and add pepper, then toss well so the flavours infuse.
- Serve with a large spoon on a large plate.
