Preparación
- Preheat the oven to 375°F (190°C). Grease a 9 x 13-inch baking dish with butter or olive oil.
- Cook the chopped onion in the olive oil over medium heat until soft and golden, about 8 minutes.
- Add the garlic and warm for a few seconds.
- Add the spinach and cook until wilted, about 4 minutes. Season with salt and pepper and let cool slightly.
- Whisk the eggs with the cream in a large bowl until fluffy, and season with salt and pepper.
- Crumble in the feta, then slowly stir in the spinach mixture.
- Pour into the baking dish and bake on the center rack until set, about 25-30 minutes. Let cool.
- Place the English muffins on the baked egg to mark and cut rectangles; save the two thin strips of egg at the edges for a sandwich.
- Split the muffins. On one half of each, layer cheese and your chosen meat, then the egg, then the other muffin half.
- Wrap each sandwich in foil or plastic wrap and label with the date and filling.
- Store the wrapped sandwiches in a freezer-safe bag or container for up to 2 months, or refrigerate for up to 1 week.
