Ingredients

Instructions

  1. Preheat the oven to 180°C/350°F (160°C fan).
  2. Butter a 23cm/9-inch round cake pan and line the base with baking paper. The sides do not need lining.
  3. In a separate bowl, whisk together the flour, baking powder and salt.
  4. Beat the softened butter on medium for 1 minute until creamy. Add the sugar and beat for another minute until fluffy and paler.
  5. Add the eggs one at a time, mixing well after each, then beat in the vanilla.
  6. On low speed, beat in the flour mixture until no dry flour is visible. Stop mixing as soon as it is combined.
  7. Stir the diced apples through with a spatula. The batter will be thick.
  8. Spread the batter evenly in the prepared pan. Bake for 35 minutes, or up to 45 minutes if your oven runs cool, until a skewer inserted in the centre comes out clean.
  9. Rest in the pan for 5 minutes, then remove and cool for a further 10 minutes before serving warm, or cool completely on a wire rack. Dust with icing sugar if desired.
