Instructions

  1. Wash the beans and pat them dry. Trim the tops and bottoms slightly and chop into 1–2 cm pieces.
  2. Peel the potatoes and dice them. Crush the ginger, garlic and green chilli into a coarse paste using a mortar and pestle.
  3. Heat the mustard oil in a kadhai over high heat until it reaches its smoking point, then lower the heat and let it cool slightly.
  4. Add the mustard seeds, cumin seeds, red chilli, asafoetida, curry leaves and the ginger-garlic paste. Stir and cook briefly over high heat.
  5. Add the diced potatoes, stir and cook over high heat for 1–2 minutes. Cover and cook over low heat for 7–8 minutes, stirring from time to time, until the potatoes are about 90% cooked.
  6. Add the beans with the salt, black salt, black pepper and turmeric. Stir well, cover and cook over low heat for 5–6 minutes until the beans are done. Stir 2–3 times while cooking so the potatoes do not stick.
  7. Stir in the garam masala, lemon juice and chopped coriander. Serve.
