- Fold a large sheet of parchment around an A4-sized sheet of paper to make a folded packet, then open it and line the folds with cubes of cold butter.

- Fold the dough over the butter, roll it out to a size 1/3 larger than an A4 sheet, and fold again.

- After the 6th turn, rest the dough in the refrigerator for 1 hour.
- Roll out the chilled dough and trim the sides to make a rectangle, then divide it into 1/3 and 2/3.
- Fold chocolate sticks into the 1/3 portion to make pain au chocolat.
- Cut the 2/3 portion into triangles and roll them into croissants.
- Place the pastries on a baking tray and prove for 15 minutes, then brush with egg wash.
- Bake in a preheated oven at 180°C for 15 minutes.
