French Glazed Carrots (Carottes Vichy)
Ingredients
- Carrot800 g
- Butter2 tbsp
- Sugar4 tsp
- Salt¾ tsp
- Parsley · finely chopped2 tsp
Instructions
- Cut a round of baking paper large enough to cover the surface of a 30 cm (12 in) pan.
- Put the water, butter, sugar and salt in a 30 cm (12 in) deep pan over medium-high heat and bring to a simmer, stirring until the sugar dissolves (about 30 seconds).
- Add the sliced carrots, stir, and reduce the heat so the liquid simmers and the carrots sit semi-submerged.
- Lay the paper round directly on the carrots, cover, and cook for 15 minutes without stirring, until the water has evaporated. The carrots should be very soft, bright orange without browning, with a thin syrupy glaze. If they are still firm, add a little more water, recover and keep cooking.
- Remove from the heat, take off the paper, add the parsley and stir very gently to coat the carrots in the glaze.
- Transfer to a bowl and serve warm.
