Fresh Apple Cake
Ingredients

- Baking powder2 tsp
- Baking soda¾ tsp
- Salt½ tsp
- Cinnamon · ground2 tsp
- Nutmeg · ground½ tsp
- Allspice · ground¼ tsp
- Vegetable oil1 cup
- Sugar1 ½ cups
- Brown sugar1 ½ cups
- Unsweetened applesauce1 cup
- Egg4
- Vanilla1 tsp
- Orange juice2 tbsp
- Apple · peeled chopped3 cups
- Butter¼ cups
- Heavy cream½ cups
Instructions
- Preheat the oven to 350°F (177°C) and grease a 9×13-inch pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger and allspice.
- In a medium bowl, whisk the oil, granulated sugar, brown sugar, applesauce, eggs, vanilla and orange juice. Pour into the dry ingredients, whisk until combined, then fold in the chopped apples.
- Spread the batter evenly in the pan and bake for 45-50 minutes, tenting loosely with foil around the 30-minute mark. It is done when a toothpick inserted in the centre comes out clean.
- Cool the cake on a wire rack for at least 30 minutes.
- Optional glaze: in a medium saucepan over medium heat, combine 1/4 cup (56g) butter, 1 cup (200g) brown sugar, 1/2 cup (120ml) heavy cream and a small pinch of salt. Stir until the butter melts, then stop stirring and boil rapidly for 1 minute.
- Reduce the heat to low, stir briefly and simmer for 1 minute. Remove from the heat and whisk in 1/2 cup (60g) sifted confectioners' sugar. Let it cool and thicken for at least 20 minutes.
- Spoon the glaze over the cake just before serving. If it has thickened too much, warm it in the microwave for 15 seconds and stir until smooth.
