Ingredients

Instructions

  1. Wash and drain the lettuce and cucumber. Cut the cucumber into pieces about 4 inches long.
  2. Slice the limes or lemons and green chili peppers into 1/4 inch thick rounds for garnish.
  3. Cut the raw fish into bite-size pieces, slicing in one smooth motion rather than sawing, and arrange on a plate.
  4. Garnish with the sliced lime and chili, sprinkle with roasted sesame seeds, and refrigerate until serving.
  5. For wasabi sauce: mix 1 tbsp wasabi powder with 2 tsp water, roll into a small ball, and add 1/4 cup soy sauce just before serving.
  6. For soybean paste sauce: mix 1/4 cup soybean paste, 2 tbsp hot pepper paste, 3 minced garlic cloves, 2 tbsp chopped green chili, 1 tbsp honey, 1 tsp roasted sesame seeds, 2 tbsp vinegar and 1 tbsp sesame oil.
  7. For hot pepper paste sauce: mix 1/4 cup hot pepper paste, 2 minced garlic cloves, 2 tbsp honey, 3 tbsp vinegar, 1 chopped green onion and 1/4 tsp salt.
  8. Pan-fry option: clean the fish, remove the guts and fillet both sides. Cut the fillet into bite-size pieces and sprinkle each with salt. Salt the head and bones, then coat the fish, head and bones lightly with flour.
  9. Heat plenty of vegetable oil in a pan and fry until golden brown and crispy.
