Fried Apple Pies
Ingredients
- Flour1 ½ cups
- Salt½ tsp
- Vegetable shortening¼ cups
- Butter5 tbsp
- Apple · peeled diced2–3 + ½ tsp
- Sugar¼ cups
- Cider1 tbsp
- Lemon2 tsp
- Cornstarch2 tsp
- Egg · beaten1
- Vegetable oil4–5 cups
- Cinnamon sugar½ cups
Instructions
- Whisk the flour and salt in a medium bowl.
- Work the shortening into the dry ingredients with your fingertips until evenly crumbly.
- Add the butter and work it in until pea-sized pieces remain.
- Add 3 tablespoons (28g) of the water and toss. Add up to 2 more tablespoons (28g) of water until the dough is chunky and holds together when squeezed.
- Shape into a square about 1 inch thick, wrap, and refrigerate for 30 minutes up to 24 hours. If chilled longer than 30 minutes, rest at room temperature for 10-15 minutes before rolling.
- For the filling, simmer the diced apples, 2 tablespoons (25g) of the sugar, water, boiled cider, lemon juice and apple pie spice over medium-low heat, stirring occasionally, for 10-15 minutes until the apples are tender.
- Stir the remaining 2 tablespoons (25g) of sugar with the Instant ClearJel or cornstarch, add to the apples and cook 1-2 minutes more until very thick.
- Remove from the heat and cool the filling to room temperature. It can be stored covered in the refrigerator for up to 1 week.
- Roll the dough on a lightly floured surface into a rectangle slightly larger than 10 x 15 inches, and trim the edges straight. Cut once lengthwise and twice crosswise into six 5-inch squares.
- Brush the square edges with egg wash, place a heaping tablespoon (40-45g) of filling down the centre of each, leaving room at the top and bottom. Fold each square in half and seal the three open edges with a fork. Put the pies on a parchment-lined tray.
- Refrigerate the pies while you heat the oil.
- In a deep pan or fryer with sides at least 3 inches high, heat 1 inch of oil over medium to 350-365°F.
- Fry 1 or 2 pies at a time for 4-5 minutes until golden, turn, and fry another 4-5 minutes.
- Remove with tongs or a slotted spoon and drain on a wire rack over a baking sheet or on paper towels. Keep the oil at 350-365°F while frying the rest.
- Once cooled for 3-5 minutes, toss the pies in cinnamon sugar to coat generously. Serve warm or at room temperature.
