Ingredients

Instructions

  1. Dust each separated wing lightly with cornstarch on both sides and let it sit at least 30 minutes before frying.
  2. Heat the oil to 350-360°F while the wings rest.
  3. Melt the 2 sticks of butter and combine it with the crunchy garlic chili oil, soy sauce, ponzu and wasabi. Mix well and keep warm.
  4. Fry the wings until they reach an internal temperature of about 190-200°F and float, then remove and let cool a few minutes. Separate drums and flats first, as they need different times.
  5. Raise the oil to 365-375°F. Return the wings to the oil for a second fry for about a minute, until crispy. Drain on a cooling rack.
  6. Toss the wings in the warm sauce until well coated, then arrange on a platter, drizzle with sushi sauce and spicy mayo, and top with everything bagel seasoning and chopped chives.
