- Chili oil4 oz
- Soy sauce3 cdas.
- Ponzu3 cdas.
- Pasta de wasabi1 cda.
- Cornstarch¼ tazas
- Bagel
- Sushi Sauce or Eel Sauce

Preparación
- Dust each separated wing lightly with cornstarch on both sides and let it sit at least 30 minutes before frying.
- Heat the oil to 350-360°F while the wings rest.
- Melt the 2 sticks of butter and combine it with the crunchy garlic chili oil, soy sauce, ponzu and wasabi. Mix well and keep warm.
- Fry the wings until they reach an internal temperature of about 190-200°F and float, then remove and let cool a few minutes. Separate drums and flats first, as they need different times.
- Raise the oil to 365-375°F. Return the wings to the oil for a second fry for about a minute, until crispy. Drain on a cooling rack.
- Toss the wings in the warm sauce until well coated, then arrange on a platter, drizzle with sushi sauce and spicy mayo, and top with everything bagel seasoning and chopped chives.
