Fried Garlic Feat. Chili Garlic Oil
Ingredients
- Garlic1 bulb
- Vegetable oil½ cups
- Chili flake · flakes4 tbsp
- Salt½ tsp
- Sugar½ tsp
Instructions
- Roughly peel the garlic. Chop it with a knife, or pound and grind it in a mortar, until it still has some texture.
- Heat the oil in a small skillet or saucepan over medium-low heat. Add the garlic and spread it evenly.
- Fry for 6 to 8 minutes, until the garlic pieces are light golden. Keep the heat low; do not let them reach deep brown, as they keep darkening after removal.
- Drain the garlic through a strainer over a mixing bowl. For chili garlic oil, add the chili flakes to the bowl with the oil; optionally season with salt and sugar.
- Spread the fried garlic on paper towel to drain off excess oil, then cool completely before transferring to an airtight container. It keeps 2 to 3 days.
