Fruit Crumble: Real Life Recipes with Tom Kerridge and Sage
Ingredients
- Frozen fruit1 kg
- Granny Smiths · peeled, cored and cut into 2cm chunks2
- Sugar4 tbsp
- Ground mixed spice1 tsp
- Vanilla · paste2 tsp
- Lemon · finely grated
- Crumble topping
- Butter · diced150 g
- Oats80 g
Instructions
- Preheat the oven to 200°C (180°C fan, gas 6). Have a deep baking dish about 27 x 23cm ready.
- Tip the frozen fruit into the dish, add the apple chunks and spread them over the base. Sprinkle over the sugar and mixed spice evenly. Dot the vanilla paste over the top and scatter the lemon zest on.
- For the topping, blitz the butter, sugar and flour in a food processor until it looks like crumbs, then add the oats. (Or rub the butter into the sugar and flour with your fingertips until crumbly, then stir in the oats.)
- Squeeze handfuls of the mixture together, then crumble it over the fruit so it covers everything. Bake on a high shelf for 35–40 minutes, until the topping is crunchy and golden and the fruit beneath is soft and saucy.
- Let the crumble cool slightly before serving.
