Ingredients

Instructions

  1. Rinse the fruits well and chill them in the fridge. Chop them only just before serving so they don't release juice and make the custard runny.
  2. Heat 2½ cups milk in a wide heavy-bottomed pan. Add the sugar and stir until dissolved.
  3. Stir the custard powder into ¼ cup warm or room-temperature milk until smooth and lump-free.
  4. When the milk is hot but not boiling, add 2 tablespoons of the custard mixture and whisk well. Repeat until all the custard mixture has been added in 3 batches, whisking after each.
  5. Taste and add more sugar if needed.
  6. Cook over low to medium heat, stirring constantly, until the custard thickens enough to coat the back of a spoon but still pours.
  7. Remove from the heat and whisk until very smooth. Cover immediately, then cool completely and chill in the fridge.
  8. Whisk the custard well before serving. Peel and chop the apple, mango and banana into bite-sized pieces and place in serving bowls or cups.
  9. Pour the custard over the fruit and gently mix. Serve immediately.
