Frying Vietnamese Donuts (Banh Tieu)

Instructions

  1. In a medium bowl, whisk together the flour, sugar, salt and baking powder. Add the milk and stir until it starts to clump, then knead by hand for about 15 minutes until smooth.
  2. Divide the dough into 5 portions and roll each into a ball. Coat each ball in sesame seeds, pressing gently so they stick.
  3. Flatten each ball with a rolling pin into a thin round disc, 2 to 3 mm thick, about 5 1/2 inches wide. The flatter, the better.
  4. Heat the oil in a wide skillet or wok over medium heat until it reaches 350°F. Without a thermometer, dip a wooden chopstick in: small bubbles should form slowly around it.
  5. Carefully add one or two discs. They should puff within 3 to 5 seconds. Flip them frequently, about every few seconds. Each takes about 1 minute 30 seconds to fry completely.
  6. Remove to a wire rack, repeat with the remaining discs, and let cool slightly before serving warm.
