Ingredients

Instructions

  1. In a small bowl, stir together 1 tablespoon soy sauce, 1 tablespoon sake, 1 tablespoon evaporated cane sugar and 1/4 teaspoon salt until the sugar mostly dissolves. Warm briefly in the microwave if you like.
  2. Wash and dry the 6 spinach leaves (12 grams). Remove the thick centre stems, stack the leaves and dice them into 3 mm (1/8 inch) pieces.
  3. In a bowl, combine 30 grams toasted sesame seeds, 25 grams katsuobushi and the spinach.
  4. Drizzle the sauce evenly over the mixture and stir until it is evenly distributed.
  5. Spread the mixture in an even layer on a parchment-lined baking sheet. Bake at 250 F (120 C) for 10 minutes.
  6. Remove from the oven and stir with chopsticks, breaking up any large clumps. Return to the oven and bake a further 10 to 15 minutes, until completely crisp with no damp pieces.
  7. Cool to room temperature, then shred the 3 grams nori (1 large sheet) over the top with scissors.
