- In a small bowl, stir together 1 tablespoon soy sauce, 1 tablespoon sake, 1 tablespoon evaporated cane sugar and 1/4 teaspoon salt until the sugar mostly dissolves. Warm briefly in the microwave if you like.
- Wash and dry the 6 spinach leaves (12 grams). Remove the thick centre stems, stack the leaves and dice them into 3 mm (1/8 inch) pieces.
- In a bowl, combine 30 grams toasted sesame seeds, 25 grams katsuobushi and the spinach.
- Drizzle the sauce evenly over the mixture and stir until it is evenly distributed.
- Spread the mixture in an even layer on a parchment-lined baking sheet. Bake at 250 F (120 C) for 10 minutes.
- Remove from the oven and stir with chopsticks, breaking up any large clumps. Return to the oven and bake a further 10 to 15 minutes, until completely crisp with no damp pieces.
- Cool to room temperature, then shred the 3 grams nori (1 large sheet) over the top with scissors.
