Furofuki Daikon Recipe - Japanese Cooking 101
Ingredients
- Daikon
- Rice2 tbsp
- Dashi6 ½ cups
- White miso · paste½ cups
- Mirin¼ cups
- Sugar¼ cups
- Yuzu · grated¼ tsp
Instructions
- Cut the daikon into 4 cm (1½ inch) pieces, peel them and chamfer the edges at an angle.
- Put the daikon and rice in a pot, cover with water, bring to just a boil over medium heat, then lower the heat, cover and simmer 30-40 minutes until soft. Drain and rinse to remove the rice.
- Put the daikon and dashi in a large pot and simmer over medium-low heat for 20-30 minutes, keeping it hot.
- Make the sauce: in a small pot combine the miso, mirin, sugar and the dashi from cooking, and cook until thickened. Turn off the heat and stir in the grated yuzu.
- Place one piece of daikon in each dish and pour the sauce over it.
