Gajar Ka Halwa | Carrot Halwa

Gajar Ka Halwa | Carrot Halwa

Ingredients

Instructions

  1. Rinse and dry the carrots, peel them, trim both ends and grate them by hand or in a food processor.
  2. Melt half the ghee in a heavy-bottomed pan. Add the carrots and cook over medium heat for 5 minutes, until they turn a brighter orange and have released some moisture.
  3. Stir in the milk and cook over medium heat, stirring often. Scrape the milk solids from the sides of the pan back into the carrots. Keep stirring so the milk does not stick to the bottom, until about 90% of the milk has evaporated. This can take 50 minutes to an hour.
  4. Add the sugar, the remaining ghee, the cardamom powder and half the chopped nuts. Mix well. The halwa will look watery at first.
  5. Keep cooking for 5 to 10 minutes, until the halwa thickens and most of the remaining milk has evaporated. Turn off the heat, sprinkle with the remaining nuts and serve warm or cold.
