Ingredients

Instructions

  1. Wash the carrots, trim the tops and bottoms, peel them, then grate them on a large-holed grater into a bowl.
  2. Set a pressure cooker on high heat, add the ghee and let it warm slightly. Add the grated carrot, stir and cook for 3-4 minutes until its moisture has evaporated.
  3. Add the milk and stir once. Pressure cook on medium heat for 1 whistle, then switch off the flame and let the pressure release naturally.
  4. Open the lid and check the whistle. Cook on medium-high heat, stirring constantly, for 10-12 minutes until most of the milk has reduced.
  5. Add the sugar and cardamom powder, stir and cook for 4-5 minutes until the halwa thickens again. Stop cooking once the sugar's water has evaporated and the halwa looks slightly shiny, before it becomes tight like barfi.
  6. Switch off the flame. Heat 2 tablespoons of ghee in a pan, add the almonds and cashews and fry, stirring, until light golden brown.
  7. Add the raisins to the nuts just before they finish browning and stir briefly.
  8. Pour the ghee and nut mixture over the halwa and stir well. Let it rest for a couple of minutes before serving.
